This new meatloaf recipe is based on the burger topping mushroom and Swiss. It's great with mac and cheese, scalloped potatoes, green bean casserole, and dinner rolls.

Ingredients For mushroom and swiss meatloaf

2 Tbspolive oil

1 csliced fresh white mushrooms

3/4 cshredded Parmesan cheese

2 Tbspsteak seasoning, divided

2 lblean ground beef

2eggs

1/2 csteak sauce
-
3/4 cPanko breadcrumbs

1packet dry onion soup mix
-
1 tspgarlic powder
-
2 cshredded processed Swiss cheese, divided
How To Make mushroom and swiss meatloaf

1Heat the olive oil in a large skillet over medium-low heat. Add the sliced mushrooms and saute for 10 minutes or until browned. Season with 1 tablespoon steak seasoning. Sprinkle with Parmesan cheese. Remove from heat and set aside.

2Preheat the oven to 350 degrees F. Lightly coat a 9x13 loaf pan with nonstick cooking spray.

3In a large bowl, combine the ground beef, egg whites, steak sauce, breadcrumbs, dry onion soup mix, garlic powder and remaining steak seasoning; mix together until blended.

4Spread meat mixture out on a piece of waxed paper, forming a rectangle about 10 inches square.

5Add 1 cup shredded Swiss cheese and sauteed mushrooms over the meat, leaving a 1/2-inch edge all around. Carefully lift an edge and roll the meat around the filling. Place into a loaf pan with the seam side down.

6Add the remaining sauteed mushrooms on the top of the meatloaf and sprinkle with remaining Swiss cheese.

7Bake in the preheated oven for 30 minutes until the cheese is melted .Let stand for 8 minutes before slicing.
