This new meatloaf recipe is based on the burger topping mushroom and Swiss. It's great with mac and cheese, scalloped potatoes, green bean casserole, and dinner rolls.

Ingredients For mushroom and swiss meatloaf

  • 2 Tbsp
    olive oil
  • 1 c
    sliced fresh white mushrooms
  • 3/4 c
    shredded Parmesan cheese
  • 2 Tbsp
    steak seasoning, divided
  • 2 lb
    lean ground beef
  • 2
    eggs
  • 1/2 c
    steak sauce
  • 3/4 c
    Panko breadcrumbs
  • 1
    packet dry onion soup mix
  • 1 tsp
    garlic powder
  • 2 c
    shredded processed Swiss cheese, divided

How To Make mushroom and swiss meatloaf

    Heat the olive oil in a large skillet over medium-low heat. Add the sliced mushrooms and saute for 10 minutes or until browned. Season with 1 tablespoon steak seasoning. Sprinkle with Parmesan cheese. Remove from heat and set aside.

    Preheat the oven to 350 degrees F. Lightly coat a 9x13 loaf pan with nonstick cooking spray.

    In a large bowl, combine the ground beef, egg whites, steak sauce, breadcrumbs, dry onion soup mix, garlic powder and remaining steak seasoning; mix together until blended.

    Spread meat mixture out on a piece of waxed paper, forming a rectangle about 10 inches square.

    Add 1 cup shredded Swiss cheese and sauteed mushrooms over the meat, leaving a 1/2-inch edge all around. Carefully lift an edge and roll the meat around the filling. Place into a loaf pan with the seam side down.

    Add the remaining sauteed mushrooms on the top of the meatloaf and sprinkle with remaining Swiss cheese.

    Bake in the preheated oven for 30 minutes until the cheese is melted .Let stand for 8 minutes before slicing.
