I stuff Poblano (sp) peppers with this mixture sometimes. But you can do it either way. It's good. I also have down to use pork and beef but you could just as well use chicken, turkey etc.

Ingredients For mexican meatloaf

1 lbground beef

1 lbground pork, chicken or turkey

1/2onion chopped

1 1/2 ccooked rice

3poblanos chopped *

3cloves chopped garlic

2 tspmccormick grill mates chipotle and roasted garlic seasoning

1 canold elpaso enchilada sauce
-
1 1/2 tspcumin
-
salt and pepper
-
1 1/2 cgrated colby / jack cheese
How To Make mexican meatloaf

1Preheat oven to 350 * if you are going to stuff the peppers, clean out the seeds and prepare them for stuffing. You will need more peppers however for this amount of meat.

2put meats into a large mixing bowl. add in cooked rice and seasonings, onion and garlic, and chopped peppers too. Mix very well.

3this is when you stuff the peppers or place meat into a sprayed oven safe dish or pan. Pour over the Old Elpaso enchilada sauce. Bake 45 minutes, then top with cheese and bake another 15 minutes. There will be a lot of juice in the pan.
