Ingredients For meatloaf with garlic sauce

  • MEATLOAF
  • 2 Tbsp
    olive oil
  • 1 lg
    onion small dice
  • 2 stalk
    celery small dice
  • 4 clove
    garlic minced
  • 1 1/2 lb
    ground beef
  • 1 1/2 lb
    ground pork
  • 2 Tbsp
    each fresh parsley and chives chopped
  • 1 tsp
    ground thyme
  • 3 lg
    eggs beaten
  • 1 c
    milk
  • 2 1/2 c
    panko bread crumbs
  • 1 Tbsp
    salt
  • 1 tsp
    black pepper
  • GARLIC SAUCE
  • 10 clove
    garlic whole
  • 3/4 c
    olive oil
  • 2 c
    chicken stock
  • 4 Tbsp
    butter
  • salt and pepper to taste

How To Make meatloaf with garlic sauce

    Preheat oven 350 degrees. Place olive oil in a saucepan and saute onions, celery and garlic until softened. Remove from heat and let cool a bit. Mix milk and Panko bread crumbs together in a large bowl.

    Add all the ingredients for the meatloaf together and mix well with your hands. Line a large baking sheet with parchment paper and shape a large loaf of meatloaf. Bake for 45 minutes to an hour depending on how thick the meatloaf is.

    Meanwhile make the garlic sauce. Combine oil and garlic in a small pan. Bring to a boil then lower the temp to lowest setting and simmer for 15 minutes. Don't burn the garlic. Remove the garlic cloves and reserve the oil for other uses.

    Add chicken stock and butter to a sauce pan. Add the cloves of garlic and bring to a boil over high heat. Lower heat to low medium and with an immersion blender blend the garlic cloves until smooth.

    Simmer 35 to 40 minutes to thicken the sauce. Season with salt and pepper. Serve drizzled over meatloaf and garnish with parsley if desired
