There are more meatloaf recipes than people in my family that cook! LOL. This one is mine, but I also like the Ann Lander's Meatloaf (also in JAP) that I got from Grandma W...as does the hubby. I also enjoy the fresh carrots that my mom Barb puts around her version of meatloaf...could do without the potatoes though! This recipe is so easy to make, to alter to your tastes, and to bake enough for a second dinner...after all, why do all the work twice as Grandma W used to say! So bake 2, freeze one, and enjoy!

Ingredients For meatloaf, megan's

  • hamburger
  • onion, chopped
  • eggs
  • ketchup
  • lipton onion soup mix
  • bread crumbs

    Mix appropriate amounts to taste... I typically use a 3-5 pound roll hamburger, a couple eggs, good healthy squirt of ketchup, 2 packages of soup mix with larger amount of hamburger, and almost an entire container of bread crumbs. I like the Italian bread crumbs, or regular, or have even used panko. When the consistency you like...

    Put into a 9x13 (or 2 if you did bigger amount of meat). Put in oven at 350 until done (check it isn't burning, if so, put foil over the top). Make them somewhat flat and oval, leaving room at the sides so they don't overflow with the cooking.
