This Recipe is by far the best I've tried. My mom always made the topping with just ketchup and mustard with brown sugar. I added a few more items and it was a hit.

Ingredients For meatloaf

2 lbground beef

1 Tbspolive oil

1onion ' finally diced
-
3garlic cloves minced

2torta bread, cubed

1/2 cmilk
-
1/4 cchopped parsley

2-3 Tbspdiced red bell pepper
-
2eggs
-
Dashworcestershire sauce
-
To Tastesalt and pepper
-
1 cparmesan cheese or parmiggiano/reggiano cheese
- FOR THE TOPPING

3/4 cketchup
-
2 Tbsptomato paste
-
1/4 cbrown sugar
-
1 tspdried mustard
-
1 tspsmoked paprika
-
1 tspgarlic powder
-
1 tsponion powder
How To Make meatloaf

1Preheat the oven to 350 degrees

2Sautee the onion, red bell pepper and minced garlic in olive oil on medium heat until soft approximately 6 min. Cool Completely.

3Add the cubed bread in a bowl and pour the milk over it. Let sit for a few minutes allowing the bread to soak up the milk.

4In a large bowl combine the beef, milk soaked bread, the cooked onion and garlic, parsley, parmiggiano cheese, worchestershire sauce, eggs, salt and pepper. Mix until well combined not over mixing.

5Place a cooling rack over a baking sheet ( or use a broiler pan) Place the meatloaf onto it and set aside.

6In a small bowl ' mix together all of the ingredients for the topping. Smear half of it over the top and reserve the rest.

7Bake the meatloaf for 50 minutes then smear the rest of the sauce on top and put it back in the overn for another 15 min.
