I created a new meatloaf recipe inspired by Louisiana Cowboy meals. It has crushed barbecue potato chips on the bottom and is filled with a bread cheese, a first for me!

  • 2 c
    crushed barbecue potato chips, divided
  • 1 Tbsp
    olive oil
  • 1 lg
    red onion, peeled and diced
  • 1 md
    carrot, chopped
  • 1 Tbsp
    barbecue seasoning
  • 2 lb
    ground round
  • 3/4 c
    panko bread crumbs
  • 1/2 c
    milk
  • 1
    packet dry onion soup mix
  • 4
    eggs, beaten
  • 10 oz
    bread cheese, cut into 1/2-inch cubes
  • 3/4 c
    hickory smoked barbecue sauce

How To Make louisiana cowboy meatloaf

    Preheat oven to 375 degrees F.

    Coat the bottom and sides of a 9x5-inch loaf pan with cooking spray. Add 1 cup crushed barbecue potato chips; mix well.

    Heat olive oil in a large, deep skillet over medium heat. Add diced red onion and chopped carrots. Saute for 5 minutes or until are tender. Season with barbecue seasoning. Set aside.

    Mix ground round, bread crumbs, milk, eggs and dry onion soup mix in a large bowl for 3 minutes until combined.

    Press half of the meat mixture into the bottom of the prepared loaf pan. Add onion-carrot mixture and cubed bread cheese.

    Top with remaining meat to form a loaf. Spread barbecue sauce on top and sprinkle with remaining crushed potato chips.

    Bake in preheated oven for 30 minutes or until the meatloaf is set. Let stand for 10 minutes before slicing.
