My daughter has been on Keto for years, so when I moved in next door to her, I started cooking a meal or two per week for her since she worked long hours. Well, folks, I started experimenting. I did a lot of research on Keto and came up with my own recipe for meatloaf. I knew you couldn't use traditional fillers like bread crumbs or crackers but I knew you could use vegetables. So I thought, what the heck. I'll try cabbage. I started throwing a few more ingredients in and folks, not trying to brag on myself, but I'm here to tell ya, it turned out delicious.

Ingredients For keto meatloaf

  • 1 1/2 lb
    ground beef
  • 1
    onion chopped
  • 2 c
    shredded cabbage
  • 1 c
    shredded cheddar cheese
  • 1 pkg
    onion soup mix
  • 1 tsp
    garlic powder
  • 1 tsp
    onion powder
  • 2
    eggs
  • 1/4 c
    milk
  • salt and pepper
  • 1/2 c
    cubed ham (optional)
  • 25
    pepperoni quartered (optional)

How To Make keto meatloaf

  • 1
    Preheat oven to 350.
  • 2
    Mix all ingredients and form into a meatloaf. I use a greased casserole dish but you use whatever you're used to.

    Bake at 350 for 1 hour.
