This is a nice alternative to your usual meatloaf. Juicy and full of flavor. Perfect served with mashed potatoes, fried cabbage and apples.

Ingredients For it's meatloaf

  • 1 1/2 lbs ground beef,
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 3/4 cup tomato juice
  • 2 eggs, beaten
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1 cup crushed soda cracker crumbs
  • SAUCE
  • 1 cup ketchup
  • 2 tsp yellow mustard
  • 2 tbsp dark brown sugar
  • pinch of salt

How To Make it's meatloaf

    Preheat oven to 375 degrees F.

    In a large bowl add all the ingredients together, mixing well, then pour evenly into a baking pan and set aside until needed.

    In a small bowl add the ketchup, mustard, brown sugar and salt; mixing well; then pour over top of the meatloaf.

    Bake for 60 minutes at 375 and allow to cool for 5 minutes before cutting and serving.
