  • MEATLOAF
  • 1 Tbsp
    olive oil
  • 1 lg
    vidalia sweet onion, peeled and diced
  • 2 Tbsp
    honey mustard
  • 2 c
    crushed honey roasted peanuts, divided
  • 2 lb
    lean ground beef
  • 1 c
    rolled oats
  • 3
    eggs
  • 2 tsp
    steak seasoning
  • 1/2 c
    honey
  • 1 tsp
    garlic powder
  • GLAZE
  • 1 c
    honey mustard
  • 1/2 c
    red pepper jelly
  • 3/4 c
    heavy cream

How To Make honey roasted meatloaf

    Heat olive oil in a large skillet over medium-high heat. Add diced vidalia onion and saute for 10 minutes, or until softened. Stir in honey mustard. Remove from heat and set aside.

    Preheat oven to 350 degrees F.

    Coat a 9x5-inch loaf pan with cooking spray. Sprinkle with 1 cup crushed honey roasted peanuts.

    In a large bowl, combine ground beef, rolled oats, eggs, remaining crushed honey roasted peanuts, steak seasoning, honey, garlic powder and sauteed diced onion; mix together until combined.

    Place beef mixture in a prepared loaf pan and bake for 20 minutes or until cooked through.

    For the glaze: in a medium bowl, combine honey mustard, red pepper jelly and heavy cream. Whisk together until blended.

    Take the meatloaf out of the oven and spread the glaze on the meatloaf. Return it to the oven for 30 minutes.

    After that, remove the meatloaf from the oven. Transfer to a serving plate and drizzle with the glaze. Serve warm.
