This is my adaptation of my daddy's meatloaf. It is moist and flavorful and pure comfort food. I serve with mashed potatoes and a salad or vegetable.

1 lbground pork

2/3 ccracker crumbs (club or ritz)

2/3 citalian bread crumbs

1 to 1 1/2 chalf and half (light cream)

2eggs

1 ccarrots, grated

2 tspgarlic powder

1onion, grated

1 mdbell pepper, diced

2 Tbspworcestershire sauce

2 Tbspsteak sauce or hp sauce

1 1/2 Tbspfresh chopped parsley

1 tspcelery salt

- GLAZE
-
1 cketchup
-
3 Tbspdijon mustard

2 Tbspbbq sauce

2 Tbsphoney
-
1 Tbspminced onion

2 tspgarlic powder

1 Tbspworcestershire sauce

1 Tbspsteak sauce or hp sauce
How To Make glazed meatloaf

1Preheat oven to 375 degrees. In a large bowl, mix cracker crumbs and bread crumbs together and pour 1 cup of half and half over the mix. Let set for 5-10 minutes to soak.

2Add all remaining loaf ingredients to bowl and mix until well combined and uniform. Add additional half & half as needed until the consistency is very wet but still able to form a loaf.

3Divide the mixture in half and place each in a 9 x 5 loaf pan. Form into even loaves.

4Mix all glaze ingredients and pour half over each loaf. Bake for 45-60 minutes until juice runs clear. Let sit for 10 minutes before slicing.
