I got this recipe from a good friend in 2017, finally got around to making this and glad I did, best meatloaf I have ever made. Excellent flavor from the from the use of the butter crackers and cheese. Highly recommended.

Ingredients For cracker barrel meatloaf

2eggs

2/3 cmilk

32butter crackers, like ritz

1small to medium onion, diced

120 gcheddar cheese, shredded, (4 oz)

1 tspsalt

1/4 tsppepper, i used black and white pepper

1 kgground beef, (2 lb)

1/2 cketchup, or chili sauce
-
1/2 cbrown sugar
-
1 tspmustard
How To Make cracker barrel meatloaf

1Preheat your oven to 180° C (350° F). Get out two loaf pans. I used my Pyrex pans.

2In a mixing bowl, beat eggs. Add milk and crackers and stir together. Add the onion and cheese and stir together. Stir in the salt and pepper.

3Add ground beef. Mix well.

4Divide mixture between the 2 loaf pans, pack down with the back of the mixing spoon, and smooth off the tops.

5Bake for 30 minutes. While the meatloaf is baking, mix together the ketchup, brown sugar, and mustard to make the topping. I used chili sauce in place of the ketchup.

6After 30 minutes of baking, spoon ¼ of the topping onto each meatloaf, return the pans to the oven and bake for another 10 minutes. Then spoon on the rest of the topping, dividing between the loaves, and bake for another 10 minutes. Remove from oven and let the loaves rest for 5 minutes.

7Slice and serve right from the pan with your favorite side dishes, and enjoy.
