I got this recipe from a good friend in 2017, finally got around to making this and glad I did, best meatloaf I have ever made. Excellent flavor from the from the use of the butter crackers and cheese. Highly recommended.

Ingredients For cracker barrel meatloaf

  • 2
    eggs
  • 2/3 c
    milk
  • 32
    butter crackers, like ritz
  • 1
    small to medium onion, diced
  • 120 g
    cheddar cheese, shredded, (4 oz)
  • 1 tsp
    salt
  • 1/4 tsp
    pepper, i used black and white pepper
  • 1 kg
    ground beef, (2 lb)
  • 1/2 c
    ketchup, or chili sauce
  • 1/2 c
    brown sugar
  • 1 tsp
    mustard

How To Make cracker barrel meatloaf

    Preheat your oven to 180° C (350° F). Get out two loaf pans. I used my Pyrex pans.

    In a mixing bowl, beat eggs. Add milk and crackers and stir together. Add the onion and cheese and stir together. Stir in the salt and pepper.

    Add ground beef. Mix well.
  • 4
    Divide mixture between the 2 loaf pans, pack down with the back of the mixing spoon, and smooth off the tops.

    Bake for 30 minutes. While the meatloaf is baking, mix together the ketchup, brown sugar, and mustard to make the topping. I used chili sauce in place of the ketchup.

    After 30 minutes of baking, spoon ¼ of the topping onto each meatloaf, return the pans to the oven and bake for another 10 minutes. Then spoon on the rest of the topping, dividing between the loaves, and bake for another 10 minutes. Remove from oven and let the loaves rest for 5 minutes.
  • Cracker Barrel Meatloaf with sides of potatoes, gravy, mixed veggies.
