This meatloaf recipe I created is half beef and half chorizo and it's stuffed.

Ingredients For chorizo meatloaf

  • 1 Tbsp
    avocado oil
  • 1 md
    vidalia sweet onion, peeled and sliced
  • 2
    banana peppers, chopped
  • 1 Tbsp
    taco seasoning
  • 1 lb
    lean ground beef
  • 6 oz
    soft Mexican chorizo, removed from casing and crumbled
  • 1 Tbsp
    sea salt mixed with black pepper
  • 1 tsp
    ground cumin
  • 3
    egg whites
  • 1/2 c
    ranch dressing
  • 3/4 c
    panko bread crumbs
  • 2 c
    shredded sharp cheddar cheese, divided

How To Make chorizo meatloaf

    Preheat oven to 350 degrees F.

    Heat avocado oil in a large, deep skillet over medium heat. Add sliced vidalia onion and chopped banana peppers, saute for 5 minutes until tender. Season with taco seasoning. Remove from heat. Set aside.

    In a large bowl, combine ground beef, crumbled Mexican chorizo, sea salt/black pepper, ground cumin, egg whites, ranch dressing and bread crumbs; mix well.

    Spoon 1/2 of meat mixture into the bottom of an 8- x 4-inch loaf pan. Arrange sauteed vegetables and 1 cup shredded sharp cheddar cheese on top.

    Top with remaining meat mixture, patting to combine both halves. Add remaining shredded sharp cheddar cheese on top.

    Bake for 30 minutes or until done. Cool completely. Cut into 8 slices and serve.
