This meatloaf recipe I created is half beef and half chorizo and it's stuffed.

Ingredients For chorizo meatloaf

1 Tbspavocado oil

1 mdvidalia sweet onion, peeled and sliced

2banana peppers, chopped

1 Tbsptaco seasoning

1 lblean ground beef
-
6 ozsoft Mexican chorizo, removed from casing and crumbled

1 Tbspsea salt mixed with black pepper

1 tspground cumin
-
3egg whites
-
1/2 cranch dressing
-
3/4 cpanko bread crumbs

2 cshredded sharp cheddar cheese, divided
How To Make chorizo meatloaf

1Preheat oven to 350 degrees F.

2Heat avocado oil in a large, deep skillet over medium heat. Add sliced vidalia onion and chopped banana peppers, saute for 5 minutes until tender. Season with taco seasoning. Remove from heat. Set aside.

3In a large bowl, combine ground beef, crumbled Mexican chorizo, sea salt/black pepper, ground cumin, egg whites, ranch dressing and bread crumbs; mix well.

4Spoon 1/2 of meat mixture into the bottom of an 8- x 4-inch loaf pan. Arrange sauteed vegetables and 1 cup shredded sharp cheddar cheese on top.

5Top with remaining meat mixture, patting to combine both halves. Add remaining shredded sharp cheddar cheese on top.

6Bake for 30 minutes or until done. Cool completely. Cut into 8 slices and serve.
