I grew up with a strong disdain for meatloaf; I went to a friend's house and had to eat an overcooked chunk of hamburger with tomato ketchup on top...i was not impressed. But I was polite...i ate it, and it took me ten years to really want to give it a second chance. My wife makes a great Italian meatloaf... My father-in-law makes a wonderful, classic, savory, meatloaf... I turned my aim on a macho meatloaf with just the right amount of kick to satisfy my heat-loving tongue without scaring away the Mrs. Here is the result, I hope you like it as much as we do!

Ingredients For bay's macho meatloaf

  • MEAT LOAF
  • 2 lb
    ground beef
  • 1 md
    yellow onion
  • 2 Tbsp
    minced garlic
  • 2
    eggs, whisked
  • 1 c
    ritz crackers, crushed
  • 2 Tbsp
    parmesan cheese, grated
  • 1 tsp
    salt
  • 2 tsp
    black pepper
  • 1/2 tsp
    crushed red pepper flakes
  • 1 tsp
    dried oregano
  • 1 tsp
    dried parsley flakes
  • THE SAUCE
  • 2 c
    tomato sauce
  • 1/2 c
    water
  • 2 Tbsp
    apple cider vinegar
  • 2 tsp
    yellow mustard
  • 2 tsp
    worcestershire sauce
  • 1/2 tsp
    oregano, dried
  • 1/2 tsp
    basil, dried
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    parsley flakes, dried
  • 1/4 tsp
    salt
  • 1/2 tsp
    black pepper

How To Make bay's macho meatloaf

    Chop Onion, whisk egg, crush Ritz Crackers, add all ingredients in large mixing bowl
  • 2
    Mix well with hands, adding more Ritz Crackers if needed
  • 3
    Mix all sauce ingredients together in separate bowl with a whisk until well blended
  • 4
    Spray non stick cooking spray in crock pot, put a little sauce in middle
  • 5
    Put meatloaf on top of sauce and pour remaining sauce on top
  • 6
    Cook on high for 3 hours
  • 7
    Or put in Dutch oven, following same steps as above, at 375° for 2-2 1/2 hours
