I created this new meatloaf recipe in the style of a bacon cheeseburger, but with banana peppers instead of pickles. It's also great on sandwiches.

  • 12 slice
    bacon, divided
  • 1 md
    vidalia sweet onion, peeled and sliced
  • 1 lb
    lean ground beef
  • 2
    egg whites
  • 3/4 c
    bread crumbs
  • 3 Tbsp
    honey mustard
  • 4 tsp
    steak seasoning
  • 3
    banana peppers, chopped
  • 8 oz
    cream cheese, softened
  • 1 c
    shredded colby jack cheese
  • 6
    American cheese slices
  • SPICY SWEET KETCHUP
  • 1 c
    ketchup
  • 1 Tbsp
    Sriracha
  • 3 tsp
    red pepper flakes
  • 3/4 c
    dark brown sugar

How To Make bacon cheeseburger meatloaf

    Preheat the oven to 350 degrees F. To make the meatloaf, chop half the bacon strips; set remaining bacon strips aside.

    Cook the chopped bacon in a large skillet over medium heat. Add the sliced vidalia onion, stirring often, until the bacon is browned and crispy, about 8 to 10 minutes; set aside.

    Mix the ground beef, egg whites, breadcrumbs, honey mustard, steak seasoning and chopped banana peppers in a large bowl until thoroughly combined.

    Spread the meat mixture out on a piece of waxed paper, forming a rectangle about 10 inches square. Spread the cream cheese, sprinkle with bacon/onion mixture and shredded monterey jack cheese over the meat, leaving a 1/2-edge all around.

    Carefully lift an edge and roll the meat around the filling. Place into a loaf pan with the seam side down.

    Bake in the preheated oven, about 30 minutes.

    To make the spicy sweet ketchup, combine the ketchup, Sriracha, red pepper flakes and brown sugar in a small bowl, stirring until the brown sugar is dissolved.

    Remove the meatloaf from the oven. Spread with spicy sweet ketchup all over the loaf. Place the cheese slices on the top of the loaf and sprinkle with remaining bacon strips on the cheese slices.

    Return the meatloaf to the oven and bake until the bacon is crispy and the cheese is melted, about 20 minutes.
