If you're like me you like foods with a robust flavor. And that's just what this recipe has. I love the crunchiness of the walnuts and the celery too. It makes a nice light summer sandwich. Hope you all enjoy.

Ingredients For roasted chicken salad with walnuts

  • 1 lb
    precut chicken breast chunks
  • 2 Tbsp
    mccormick perfect pinch rotisserie chicken seasoning
  • 1/4 c
    chopped onion
  • 2-3 Tbsp
    olive oil
  • 1/4 c
    chopped celery
  • 1/4 c
    chopped walnuts
  • 1/4 c
    finely chopped tomato
  • 2 Tbsp
    grated parmesan cheese
  • 2-3 Tbsp
    grated asiago cheese
  • 3/4 c
    mayonaise

How To Make roasted chicken salad with walnuts

  • 1
    preheat oven to 350 degrees. place chicken chunks in medium bowl. Sprinkle with McCormick seasoning. mix thoroughly
  • 2
    Put 2-3 Tablespoons olive oil in baking pan. place chicken chuncks in pan and cook in oven for 35 minutes.

    Remove chicken from oven and chop into small pieces. Place in medium size bowl. Add onions, tomatoes, celery, walnuts. Mix well.

    If desired sprinkle a little bit of the McCormack seasoning into mayonnaise. Mix into chicken mixture. add more mayonnaise if needed.
