I wanted to do a nice cool, refreshing salad, but with a sweet dressing rather than an Italian dressing. My husband doesn’t like Italian dressing so I decided to make up a homemade honey mustard dressing. The salad is just your regular cucumber, red bell pepper, green onion, red onion, cherry tomato salad with basil leaves and fresh parsley from my garden. I’ve never made this before, but transitioned from a California style spaghetti salad and added in my own ingredients. It does need to chill for a couple of hours before serving. This is a pretty big salad, so I would use huge bowl.

Ingredients For chicken linguine salad with honey mustard dressing

  • 1 lb
    chicken breast
  • 1 pt
    cherry tomatoes, cut in half or quartered
  • 1 lg
    cucumber, quartered
  • 1/2 md
    red onion, diced
  • 5 bunch
    green onion, whites and greens sliced into pieces
  • 1 md
    bell pepper (any color), chopped
  • 1 can
    black olives, cut in half or sliced
  • 1 lb
    linguine pasta
  • honey mustard dressing
  • 3 sprig
    fresh parsley, minced
  • 5 sprig
    fresh basil, torn into bits
  • 1/4 c
    feta cheese

How To Make chicken linguine salad with honey mustard dressing

    Secure a huge bowl with a resealable lid. Cook the chicken until no longer pink. Chop into cubes or shred and add to the bowl.

    Add the chopped tomato, cucumber, red onion, green onion, bell pepper, and olives to the bowl. Toss to coat.

    Cook the pasta to al dente. Drain and rinse under cold water. Let drain and set aside.

    Make up the honey mustard dressing. (You can find the recipe on Pinterest.) Add it to the bowl. Toss to coat then add the cooled linguine.

    Add remaining ingredients and toss everything together until well coated. Chill for 3 to 4 hours or up to overnight.
