Ingredients For farmer style rabbit

1rabbit, cut up

1 1/2 csliced onions

1/4 lbbacon, diced

1 cpeas
-
1 cdry white wine, preferably soave

1 lgjuice of 1 large lemon

1/2 cunbleached flour
-
1 Tbspfresh rosemary

3 Tbspolive oil
-
salt and pepper to taste
How To Make farmer style rabbit

1Place rabbit in large bowl and add the lemon juice. Let it rest for 15 to 30 minutes. Remove and dry well.

2Combine the flour, salt and pepper and lightly flour the rabbit pieces.

3In a large skillet, heat the olive oil over medium high heat. Add the rabbit pieces and brown them on all sides. Add the bacon and sauté for 2 minutes. Sprinkle with the rosemary and remove from the heat.

4Spread the onions in the bottom of a baking dish. Arrange the rabbit pieces, with the bacon on top. Add the wine, peas, salt and pepper to taste.

5Cover the dish with foil and bake for 35 minutes or until the rabbit is tender. Serve in baking dish.
