There is no great story here! I saw some gorgeous green peppers in the grocery store and had the idea of filling them with yummy pizza flavors. I like them because it is made with ground turkey. My hubby likes them because they are delicious! Cheesy, pizza-y goodness.

Jeannie's stuffed peppers are delish! They have all the wonderful pizza flavors stuffed inside bell peppers. We love how she layers the meat, toppings, and cheese. It creates a wonderful bite. If you want, as we did, add your favorite pizza toppings for even more pizza flavor and style. We opted for pepperoni.

Ingredients For pizza stuffed peppers

  • 1 1/2 lb
    ground turkey
  • 2 Tbsp
    olive oil
  • 1 md
    white onion, diced
  • 3 clove
    garlic, pressed
  • 6 lg
    green peppers with tops removed and seeded/reserve pepper part of tops
  • reserved pepper tops/diced
  • 1 1/2 c
    shredded Provel cheese
  • 2 tsp
    Kosher salt
  • 2 tsp
    ground black pepper
  • 2 Tbsp
    dried oregano
  • 1 tsp
    dried thyme
  • 2 Tbsp
    dried basil
  • 1 Tbsp
    fennel seed
  • 2 14 oz jar
    pizza sauce (or cans, or homemade)
  • 1/2 Tbsp
    crushed red pepper
  • 1/2 c
    large black olives/sliced (optional)

Provel cheese is popular in St. Louis and is a combination of cheddar, Swiss, and provolone. It's can be hard to find. Mozzarella or a shredded Italian cheese blend will work too.
  • Browning ground turkey.

    Brown ground turkey in olive oil.
  • Baking bell peppers in the oven.

    Meanwhile, while the turkey mixture is cooking, place seeded green peppers in a baking dish and cover with foil. Bake in 350 degree F oven for 30 minutes to soften peppers.
  • Garlic, onion, reserved pepper tops, and all spices in ground turkey.

    Once turkey is halfway browned, add garlic, onion, reserved pepper tops, and all spices. Brown turkey the rest of the way and until onions are translucent and green pepper is softened.
  • Pizza sauce added to the ground turkey.

    Once turkey mixture is finished cooking, add pizza sauce to the mixture and simmer for 10 minutes.
  • Layers of turkey, cheese, black olives in the bell pepper.

    Once green peppers are softened in oven and the turkey mixture is finished simmering, fill peppers with alternating layers of stuffing ingredients (cheese, black olives, turkey mixture, in that order), making two layers of each ingredient), ending with turkey mixture as the top layer.
  • Baking dish covered in foil and baking peppers in the oven.

    Cover with foil and bake at 350 degrees F for 30 minutes.
  • Browning cheese on top of the peppers.

    During the last 2 minutes of baking, remove foil and top stuffed pepper with more Provel cheese and melt/brown cheese under the broiler. Enjoy!
