This recipe is quick to put together. It uses the leftover turkey meat from the Holidays. You may also use ground turkey in place of the turkey breast meat. This is a heart healthy meal and can take a lot of spices just not more salt or fat!

1 lbturkey breast, diced (left over is fine)

1 candced tomatoes with green chilies

1 canlow sodium diced tomatoes, plain

2 canlow sodium pinto beans, rinsed

1 canpork and beans, rinsed

1/2 smonion, chopped
-
3 clow sodium beef broth or water
-
2/3 cinstant brown rice
-
1/2 pkgtaco seasoning mix
-
8 ozlow fat shredded cheddar cheese
-
sour cream, lite if desired
How To Make low fat slow cooker turkey taco soup

1Add cubed turkey, diced tomatoes and chopped onions to slow cooker. Rinse beans and add to cooker. Stir then add 1 cup low sodium beef broth and 1/2 package Taco Seasoning mix, then set slow cooker on high for 4 hours or longer. I did this for 4 hrs.

230-60 minutes prior to serving add the instant brown rice and remaining water or beef broth and let cook till rice is tender and soup is hot.

3To serve: serve chili into bowls and top with 1/4 cup of shredded cheddar cheese to bowls and top with light sour cream if desired.
