leftovers - inside out turkey pot pie

This was my end results to using leftover stuffing and turkey I had, from Sunday's dinner! It was a big hit with my kids...very comforting. Try it with your leftover Thanksgiving feast...Use your imagination...almost any veggie would be great...if you don't like Swiss cheese, use your favorite or leave it out completely...I just threw this together as I went...LOL!

Ingredients For leftovers - inside out turkey pot pie

  • 2 c
    cubed cooked turkey - leftovers
  • 3 c
    home made stuffing- leftover or 3 cups worth prepared stuffing mix
  • 1/2 c
    turkey gravy - leftover or jar
  • 1 - 14.75 oz
    can - cream of chicken soup
  • 1/2 c
    sour cream
  • 1 c
    milk
  • 1 tsp
    each - salt & pepper or to taste
  • 1 pinch
    nutmeg
  • 1 tsp
    chicken or turkey better than bouillon paste mixed with 1 tbsp water - - optional - i used for more flavor
  • 2 Tbsp
    fresh chopped parsley
  • 1 1/2- 2 tsp
    poultry seasoning
  • 14 oz
    par cooked - mixed vegetables, i put in microwave for 5 min with a little water - drain
  • 1 c
    shredded, swiss cheese

How To Make leftovers - inside out turkey pot pie

    Preheat oven to 350 degree F. I first placed my leftover stuffing in my food processor and pulsed to break up into crumb mix. I then added gravy and mixed, just enough to moisten and hold together for crust. Reserve about 1 cup for topping.

    Press into a (deep dish 9 - 10 in pie plate or shallow casserole dish), on the bottom and up the sides. Place turkey evenly over crust, sprinkle with cheese or if prefer, mix the turkey in with the next step. I left mine without sauce to add the layer of cheese.

    In a bowl, mix the soup with sour cream, bouillon mix and milk, until well blended. Add the seasonings, parsley and drained vegetables and mix until blended. Taste and add more seasoning if you like.

    Pour this mixture over the turkey and cheese and sprinkle with reserved stuffing. I placed the pie on a baking sheet ( in case it over ran, which it didn't) Place in oven and bake for about 1 hour or until heated through and bubbly.

    Leave set for 5 - 10 minutes then dish out onto serving plates. Salt & pepper if desire. My family thought this was a hit, hope you do as well! A great way to use up those delicious leftovers.
