Ingredients For hearty unstuffed cabbage wedges

2 lblean ground turkey or chicken

1 Tbspolive oil, extra virgin

1 lgmaui sweet onion
-
1 smleek, washed and sliced thin

2 clovegarlic
-
1green bell pepper, chopped
-
1/4 ctomato paste, italian
-
1/2 cwater
-
3 lbchopped fresh tomatoes
-
1 tspfresh cracked black pepper
-
1 tspsea salt
-
1bay leaf (crushed)
-
1 Tbspfresh thyme leaves
-
1head of cabbage, cut into wedges
-
1 Tbspolive oil, extra virgin
-
1/2 cchopped fresh parsley
-
1 ccojita cheese
How To Make hearty unstuffed cabbage wedges

1Preheat oven to 375F
-
2Saute onions, leeks, green bell pepper, and garlic in olive oil.

3Add ground turkey or ground chicken, and brown.
-
4Add tomatoes, tomato paste, water, all the herbs, salt and pepper.

5Core the cabbage, chop up JUST the core and add it to the ground turkey mixture.

6Bring to a boil, then reduce heat, cover, and simmer 30 minutes.

7While the turkey is simmering, layer the cabbage wedges in a single layer on a baking pan.

8Brush with olive oil, sprinkle with salt & pepper, and roast at 375 F for 20 minutes or until tender and browned.

9When the cabbage is tender, remove it from the oven.

10Place a cabbage wedge on a plate over some rice or noodles, and top with the ground turkey mixture.

11Sprinkle with cojita cheese and chopped parsley.
