Ingredients For shrimp & spinach pasta

8 ozspaghetti

1/4 tspsalt

2 Tbspolive oil

1 clovegarlic

1 lblarge shrimp, peeled & deveined

2-28 ozcans diced tomatoes, drained

1/2 cwhite wine
-
1/2 ccream cheese, softened
-
2 cfresh spinach, torn
-
3 Tbspfresh parsley, chopped
-
3 Tbspfresh basil, chopped
-
1/4 cfresh grated parmesan cheese
-
fresh ground pepper, to taste
How To Make shrimp & spinach pasta

1Bring a large pot of water to a boil, add salt. Cook pasta until al dente. Drain. Keep warm & set aside.

2Heat oil in a 10 inch skillet over medium heat. Cook garlic until tender, about 1 min. Do not burn. Add shrimp and cook 3-5 mins. Remove shrimp garlic and set aside.

3Stir tomatoes, wine, parsley, and basil into skillet. Continue cooking and stirring occasionally until liquid is reduced by half, 10-12 mins. Add cream cheese and wisk until smooth.(I use my immersion blender)

4Add shrimp and continue cooking until heated through, 2-3 mins. Add spinach and toss until wilted (1 min). Toss with pasta. Sprinkle with parmesan cheese. Add fresh ground pepper and serve.
