Ingredients For seafood stuffed potato

  • 4 lg
    white potatoes
  • 3/4 c
    butter
  • 3/4 c
    whipping cream
  • creole seasoning to taste
  • 6 tsp
    grated onions
  • 1/4 c
    chopped parsley
  • 1/4 c
    chopped onion tops
  • 1/2 tsp
    salt
  • 1-11/2 c
    grated sharp yellow cheese
  • 1 lb
    or 2 c. shrimp, crawfish or crabmeat
  • paprika to garnish

How To Make seafood stuffed potato

  • 1
    Bake at 325 until done. Cut lengthwise and scrape out inside, leaving enough potato to hold shell together.
  • 2
    Whip potato with all other ingredients. Add seafood last. Refill potato shells and sprinkle with paprika. Reheat at 400 for 20 minutes.

    When using shrimp, sauté on top of stove before hand and chop. Can be done the night before
