Ingredients For orange-ginger shrimp skewers

1/2 cfresh orange juice (about 2 oranges)

2 Tbspgreen onions, minced

1 Tbspfresh ginger, peeled and minced

1 Tbspfresh cilantro, minced

2 Tbsprice vinegar

2 Tbsplow sodium soy sauce

1 Tbspvegetable oil

2 tsporange rind, grated

1red chile pepper, minced (optional)

1 lblarge shrimp, peeled and deveined

2oranges, peeled and quartered

How To Make orange-ginger shrimp skewers

1Combine first 9 ingredients in a bowl. Add shrimp; toss to coat. Cover and marinate in refrigerator for 15 minutes.

2Remove shrimp from dish, reserving marinade. Thread shrimp and orange quarters alternately onto each of 8 skewers (8 inches in length).

3Heat a large grill pan, coated with cooking spray, over medium-high heat. Cook skewers 4 minutes on each side or until done, basting with reserved marinade.
