Ingredients For indian fish coconut curry

2boneless skinless fish fillets cod, haddock, catfish all work well

1 Tbspolive oil

1 mdred onion diced

1sweet chili pepper seeded and diced

3 clovegarlic minced

1 lgtomato skinned and diced

1 tspgaram masala

1 tspindian curry powder

1 tspsalt

1 ccoconut milk

1/2 cwater
-
1/2 cketchup

1/4 cfresh cilantro chopped

1 Tbspfresh ginger minced

1/2 cdry white wine
How To Make indian fish coconut curry

1Cut fish into desired size pieces sprinkle with salt and set aside.

2Add oil to pan. Add onion, ginger, garlic, and chili pepper. Saute 5 minutes. Deglaze with white wine. Let almost all evaporate. Add tomato, garam masala and curry powder. cook 2 minutes breaking up tomato.

3Add in coconut milk, water and ketchup. Simmer 2 minutes. Add fish and cook another 4 minutes or until fish is done.

4Serve over rice and garnish with cilantro.
