Just the right heat and a secret ingredient of my own. Ketchup. That's right ketchup makes this sauce amazing.

Ingredients For indian fish coconut curry

    boneless skinless fish fillets cod, haddock, catfish all work well
  • 1 Tbsp
    olive oil
  • 1 md
    red onion diced
  • 1
    sweet chili pepper seeded and diced
  • 3 clove
    garlic minced
  • 1 lg
    tomato skinned and diced
  • 1 tsp
    garam masala
  • 1 tsp
    indian curry powder
  • 1 tsp
    salt
  • 1 c
    coconut milk
  • 1/2 c
    water
  • 1/2 c
    ketchup
  • 1/4 c
    fresh cilantro chopped
  • 1 Tbsp
    fresh ginger minced
  • 1/2 c
    dry white wine

How To Make indian fish coconut curry

    Cut fish into desired size pieces sprinkle with salt and set aside.

    Add oil to pan. Add onion, ginger, garlic, and chili pepper. Saute 5 minutes. Deglaze with white wine. Let almost all evaporate. Add tomato, garam masala and curry powder. cook 2 minutes breaking up tomato.

    Add in coconut milk, water and ketchup. Simmer 2 minutes. Add fish and cook another 4 minutes or until fish is done.

    Serve over rice and garnish with cilantro.
