Ingredients For creole style chicken, sausage & shrimp

  • 1 Tbsp
    olive oil
  • 1
    chicken breast (boneless, skinless)
  • 1/2 pkg
    chicken smoked sausage
  • 2 stalk
    celery (chopped)
  • 1/2
    red pepper (chopped)
  • 1 sm
    onion (chopped)
  • 2 clove
    garlic (chopped)
  • 2 c
    cooked brown rice
  • 1/2 tsp
    thyme
  • 1/4 tsp
    cayenne pepper
  • 1 can
    tomato soup
  • 1/2 to 1 c
    water
  • 1/2 bag
    large cooked shrimp

How To Make creole style chicken, sausage & shrimp

    Cook the rice until it is done and set aside.

    Add olive oil to another pan and cook the chicken and sausage until browned. Remove from the pan and set aside.

    Add the celery, red pepper, onion and garlic to the pan and cook until the veggies are tender.

    Add the cooked rice to the pan with the veggies, add the thyme, cayenne pepper and the tomato soup. Add some water if it is too thick. Stir everything together and heat to a slow boil.

    Reduce the heat to low and cook for about 15 minutes. Stir in the cooked shrimp. Cover and let it sit for about 10 minutes. Serve it with some parsley sprinkled on top, if desired.
