Ingredients For baked fish and rice

  • 1 1/2 c
    boiling chicken broth
  • 1/2 c
    uncooked long grain rice
  • 1/4 tsp
    italian seasoning
  • 1/4 tsp
    garlic powder
  • 10 oz
    frozen chopped broccoli
  • 1 Tbsp
    grated parmesan cheese
  • 2.8 oz
    french fried onions
  • 1 lb
    fresh or frozen fish fillets thawed
  • 1/2 c
    cheddar cheese, shredded

How To Make baked fish and rice

  • 1
    In a greased 11 x 7 x 2 in. baking dish, combine broth, rice, Italian seasoning and garlic powder. Cover and bake at 375 for 10 minutes.

    Add broccoli, Parmesan cheese and half of fried onions. Top with fish fillets; sprinkle with paprika
  • 3
    Cover and bake 20-25 minutes longer until fish flakes easily with a fork.
  • 4
    Uncover; sprinkle with cheddar cheese and remaining onions. Return to oven for 3 minutes or until cheese is melted.
