This dish is good anytime of the day or night and any season. This is one of the ways I can get my youngest son to eat his spinach. He always eats two pieces whenever I make this pie. I usually make two so that he can have some for another meal. Popeye would be so proud.

Ingredients For spinach-cheese pie

  • 1 9-inch
    pie crust shell, unbaked
  • 2 Tbsp
    butter
  • 1/4 c
    chopped, scallions
  • 1-10 oz
    pkg, frozen chopped spinach, thawed and well drained
  • 2 lg
    eggs, beaten, slightly
  • 1 c
    ricotta cheese
  • 1/2 c
    parmesan cheese, grated
  • 1 c
    cottage cheese
  • 3/4 tsp
    salt
  • 1 dash
    nutmeg
  • 1 dash
    pepper

How To Make spinach-cheese pie

    Preheat oven to 375 degrees. Place pie crust in a quiche dish or pie plate; set aside until your filling is ready.

    Sauté scallions in butter until soft; add spinach to the pan and stir 1-2 minutes until heated through. Remove pan from heat to cool.

    Mix eggs with the cheeses, salt, nutmeg, and pepper in a medium bowl. Stir in the cooled spinach mixture. Spoon into pie shell and bake for 45 minutes.

    Serve hot, or cold. This pie is good either way.
