This dish is good anytime of the day or night and any season. This is one of the ways I can get my youngest son to eat his spinach. He always eats two pieces whenever I make this pie. I usually make two so that he can have some for another meal. Popeye would be so proud.

Ingredients For spinach-cheese pie

1 9-inchpie crust shell, unbaked

2 Tbspbutter
-
1/4 cchopped, scallions
-
1-10 ozpkg, frozen chopped spinach, thawed and well drained

2 lgeggs, beaten, slightly

1 cricotta cheese
-
1/2 cparmesan cheese, grated

1 ccottage cheese
-
3/4 tspsalt
-
1 dashnutmeg
-
1 dashpepper
How To Make spinach-cheese pie

1Preheat oven to 375 degrees. Place pie crust in a quiche dish or pie plate; set aside until your filling is ready.

2Sauté scallions in butter until soft; add spinach to the pan and stir 1-2 minutes until heated through. Remove pan from heat to cool.

3Mix eggs with the cheeses, salt, nutmeg, and pepper in a medium bowl. Stir in the cooled spinach mixture. Spoon into pie shell and bake for 45 minutes.

4Serve hot, or cold. This pie is good either way.
