This recipe comes from the north central West Virginia city of Fairmont. Different areas of West Virginia have different hot dog sauces depending on the cultural and ethnic background of their inhabitants. Also different area of the state refer to it as chili or sauce, in central WV it's called sauce, in southern West Virginia it's called chili.

Ingredients For fairmont, west virginia hot dog sauce

  • 1 c
    finely chopped onions
  • 5 lb
    ground beef
  • 1 Tbsp
    black pepper
  • 1/4 lb
    ground pork
  • 1 tsp
    salt (adjust as needed)
  • 3 Tbsp
    chili powder
  • 4 tsp
    crushed chili flakes ( med hot)
  • 32 oz
    tomato sauce
  • 14 oz
    ketchup
  • 6 oz
    tomato paste
  • 2 Tbsp
    olive oil
  • 1/4 tsp
    cumin
  • 1 dash
    tabasco sauce

How To Make fairmont, west virginia hot dog sauce

    In a large pot heat olive oil and add onions till just tinder but not browned, crumble hamburger and sausage and just cover with water, work with hands to break up ground meats. Cook on medium for 1 hour.

    Add remaining ingredients and simmer for two more hours.

    If you like a thinner sauce add more water half way through the final two hours. If you like thicker, simmer awhile longer uncovered.
