Different areas of West Virginia have different hot dog sauces depending on the cultural and ethnic background of their inhabitants. Also different area of the state refer to it as chili or sauce, in central WV it's called sauce, in southern West Virginia it's called chili.

1 cfinely chopped onions

5 lbground beef

1 Tbspblack pepper

1/4 lbground pork

1 tspsalt (adjust as needed)

3 Tbspchili powder

4 tspcrushed chili flakes ( med hot)

32 oztomato sauce
-
14 ozketchup
-
6 oztomato paste

2 Tbspolive oil
-
1/4 tspcumin

1 dashtabasco sauce
How To Make fairmont, west virginia hot dog sauce

1In a large pot heat olive oil and add onions till just tinder but not browned, crumble hamburger and sausage and just cover with water, work with hands to break up ground meats. Cook on medium for 1 hour.

2Add remaining ingredients and simmer for two more hours.

3If you like a thinner sauce add more water half way through the final two hours. If you like thicker, simmer awhile longer uncovered.
