I needed to make a lot of pot roast, as I was having quite a few dinner guests. So I did it like this! I've written this recipe how I would do it for a medium to large sized roast. I was unable to put the cooking times in as the cooking time will vary with the size of the roast and the method you are using to cook it. The accolades have still not stopped. The dinner was a huge success and even the in-laws and their side of the family asked for the recipe.

This recipe for roasted beef is super yummy. Honestly, I have never thought about using a tomato base to cook a roast like this. The tomato soup mingles with all the dried herbs. Fresh onion is really a nice touch to the sauce and adds flavor to the meat. The sauce is so good, I recommend pouring over the sliced meat. I used the slow cooker method and it was so easy. Your family and friends will love this easy dinner recipe.
Ingredients For roasted beef

1beef roast, any cut

1/2 colive oil

2 Tbspgarlic powder, or two cloves minced garlic

1 Tbspsweet basil

1 lgonion, minced

1/2 tspdried rosemary

1/2 tspdried margoram
-
1/2 tspdried oregano leavess

1/2 tspdried thyme
-
1/2 tspdried parsley
-
1 cantomato soup
-
1/2 can(the soup can) of water
How To Make roasted beef

1Wash the roast in WATER, then pat dry with a paper towel.

2Generously rub down the roast with olive oil. Set aside on the roasting rack.

3In a small bowl, combine all of the spices, including the onion and garlic.

4Rub the combined spices onto the oiled roast thoroughly.

5Place beef in slow cooker or large baking pan.

6In the small bowl, mix the soup and water together. Pour half of the liquid evenly over the roast.

7Using a large fork and knife, turn the roast over and pour the remaining liquid evenly on that side of the roast.

8Roast at 350 degrees in the oven, until desired amount of done-ness, rare, medium or well done. You can use a slow cooker, by using the high setting for three to four hours, or the lower setting for 6-8 hours. I've used my big slow cooker to cook two at a time, for two hours at 450 degrees, very successfully. ENJOY!
