Ingredients For spiced rubbed smoky ribs

  • 4 lb
    short ribs, fat trimmed
  • 1 Tbsp
    chili powder
  • 1 Tbsp
    light brown sugar
  • 1 tsp
    salt
  • 1 tsp
    garlic powder
  • 1 tsp
    onion powder
  • 1 tsp
    ground cumin
  • 1 tsp
    pepper
  • 1/4 tsp
    cayenne pepper
  • 2 c
    mesquite wood chips
  • 1
    onion, diced
  • 2 tsp
    minced garlic
  • 1 Tbsp
    canola oil
  • 1-1/2 c
    ketchup
  • 1/4 c
    worcestershire sauce
  • 1/4 c
    brewed coffee
  • 1/4 c
    red wine vinegar
  • 2 Tbsp
    light brown sugar
  • 1
    chipotle pepper in adobo sauce, chopped
  • 2 tsp
    dry mustard
  • 1/2 tsp
    salt

How To Make spiced rubbed smoky ribs

    Heat oven to 350. Put ribs in a roasting pan. In bowl, combine chili powder, 1 tbsp brown sugar, 1 tsp salt, garlic and onion powders, cumin, pepper and cayenne pepper. Sprinkle over ribs, press in w/ fingers. Meanwhile soak wood chips in water 30 mins, drain, place in bottom of grill.

    Cook ribs 1-1/2 hrs. Drain of any fat. In saucepan cook onion and garlic in oil for 5 mins. Stir in ketchup, worcestershire sauce, coffee, vineagr, 2 tbsp brown sugar, chipotle pepper, dry mustard and 1/2 tsp salt.

    Bring to a boil, reduce heat and simmer 30 mins, stirring occasionally. Heat grill to medium. Place ribs on grill. Grill 15 mins, turning once. Serve w/ sauce.
