It's about to get wild on the dinner table. This new pork casserole recipe I created is filled with shredded pork, diced ham and bacon.

Ingredients For wild pork casserole

  • 1 c
    crumbled cooked bacon bits
  • 1 Tbsp
    margarine
  • 1 c
    chopped carrot
  • 1/2 c
    diced red onion
  • 1 Tbsp
    olive oil
  • 3 c
    shredded pork
  • 2 c
    diced ham
  • 1/4 tsp
    seasoned pepper
  • 1 bag
    frozen hash brown potatoes, thawed
  • 1 c
    crumbled blue cheese
  • 2 c
    shredded sharp cheddar cheese, divided
  • 1 can
    condensed cream of chicken soup (10.75 ounces)
  • 3/4 c
    whipped cream cheese
  • 1 c
    sour cream
  • 1/2 c
    bread crumbs

How To Make wild pork casserole

  • 1
    Preheat oven to 350 degrees F. Grease a 13x9-inch baking pan. Add crumbled cooked bacon bits.

    Heat margarine in a large skillet over medium heat. Add carrot and red onion and saute for 5 minutes or until tender. Remove from heat and transfer into a medium bowl.

    Heat olive oil in a same skillet over medium-high heat. Add shredded pork and diced ham. Saute for 7 minutes and season with seasoned pepper.

    Add hash brown potatoes and blue cheese in a prepared baking pan.

    In a large bowl, combine carrot mixture, ham mixture, 1 cup sharp cheddar cheese, soup, cream cheese and sour cream; mix together.

    Spread pork mixture over potato mixture. Sprinkle remaining sharp cheddar cheese and bread crumbs on top.

    Bake in preheated oven for 30 minutes.
