An amazing way to prepare a roasted pork loin. It's easy enough to make any day of the week, but fancy enough to serve on a special occasion. Dijon mustard adds a touch of tanginess and the crust is crisp. The pork loin is tender, juicy, and slices like butter. We really enjoyed the creamy peppercorn sauce. There's a bit of peppery spice but it's not overpowering. If you're sensitive to peppercorns, you might want to cut back on them a bit.

1 Tbsplow-fat buttermilk

1 cbread crumbs

2 Tbsppepper

2 tspcrushed mix peppercorns

1/4 tspsalt
- CREAMY PEPPERCORN SAUCE

3/4 cbuttermilk

1/3 cfat-free sour cream

3 TbspParmesan cheese, grated

3 Tbspmayo

1 1/2 Tbsplemon juice

1 1/2 tspmixed peppercorns, crushed

1/4 tspsalt
How To Make peppercorn crusted pork loin with creamy sauce

1Preheat oven to 325 degrees.

2Combine mustard and buttermilk.

3Spread over roast.

4Combine bread crumbs, pepper, salt, thyme, and peppercorns in a bowl. Press mixture evenly over roast.

5Place roast on broiler pan coated with cooking spray. Bake for 2 hours and meat thermometer reads 160 degrees. Let stand 10 minutes before slicing.

6Combine all ingredients for the creamy peppercorn sauce in a bowl. Serve with pork loin slices.
