This makes for an easy Sunday dinner. I always use left over ham, but you can use thickly sliced deli ham.

Ingredients For pasta and ham bake

1 lbelbow macaroni

1 Tbspcanola oil
-
1red onion, thinly sliced

1 tspminced garlic
-
1red bell pepper, thinly sliced

114 oz can chopped tomatoes

9 ozdiced ham
-
3 Tbspchicken broth
-
2 tspdried oregano
-
salt and pepper to taste
-
1 cbread crumbs, i used italian-style

3 Tbspgrated parmesan cheese

2 Tbspmelted butter
How To Make pasta and ham bake

1Cook pasta as directed, drain. Heat oven to 400. Spray a 2-quart casserole dish w/ cooking spray. Heat oil in saucepan over medium heat. Add onion, garlic and red bell pepper. Cook, stirring for 5 mins.

2Add tomatoes, ham, broth,and oregano. Bring to boil. Simmer for 3 mins. Remove from heat. Stir in macaroni. Season w/ salt and pepper.

3Spoon into baking dish. In small bowl, combine bread crumbs, parmesan cheese and butter. Sprinkle bread crumbs over casserole. Place casserole dish on a baking sheet. Bake 20 mins, or until bubbly.
