nelda's fried polenta with tomato and sausage sauce

I bought a roll of polenta not sure what I was going to make with it. Once I got in the kitchen things just started coming together and this is the recipe I came up with. We really enjoyed it, great taste and filling.

This is an unusual dinner recipe, but boy did we enjoy it. Frying the polenta in butter makes the edges nice and crispy but keeps the middle creamy. The pork and tomato mixture gives the polenta a punch of rich flavor. This is an easy to throw together meal everyone will enjoy.

Ingredients For nelda's fried polenta with tomato and sausage sauce

1roll of polenta
-
1 lbground pork or Italian sausage

1 candiced tomatoes (28 oz)

2 tspminced garlic
-
1 smred oninon, chopped
-
1jalapeno, chopped

salt and pepper, to taste

1 Tbspbutter
-
shredded Parmesan cheese
How To Make nelda's fried polenta with tomato and sausage sauce

1Cook sausage and onions together until done.

2Add tomatoes, garlic, jalapeno, salt, and pepper. Let simmer.

3Slice polenta in 1" slices. In a skillet, melt butter. Add sliced polenta and cook 3-5 minutes on medium heat on each side.

4Serve sausage mixture over fried polenta and top with shredded Parmesan cheese.
