One of our favorite dishes is a baked potato with barbeque on top but I wanted to come up with a different way of eating potatoes and barbeque and this is the recipe I came up with, now it is one of our favorites.

5-6potatoes peeles and diced

1/2 csour cream

1 1/2 cshredded cheddar cheese

16 ozbowl of loyd's barbequed shredded pork or make your own

2-3 Tbspbutter

salt and pepper to taste
How To Make nelda's barbeque casserole

1Boil potatoes until tender, drain. Add sour cream, butter, salt and pepper to potatoes and mash or cream(I use a potato masher but you can use an electric mixer). Butter a 2 quart casserole dish and put potatoes in the bottom of dish, top with cheese then with barbequed pork. Bake at 350 degrees for 20 minutes. I serve it with extra sour cream and my grandson likes Ranch dressing on his.
