I love stuffed cabbage rolls with the tangy sweet sauce. I was excited to turn my favorite recipe into an easy casserole. IT is easy to double this recipe and make and extra casserole to stick in the freezer. Don't bake until removing from freezer. For the rice ingredient I like to use the brown rice/quinoa ready to use packets. The quinoa adds a healthier less carbohydrate component to the recipe. I prefer the currents over the raisins.

Ingredients For michelle's cabbage roll casserole

  • 3 medium
    onions, slivered
  • 2 Tbsp
    butter
  • 1/2 lb
    lean ground beef
  • 1/2 lb
    ground pork
  • 1/2 c
    dried currents or golden raisins
  • 1/4 c
    lemon juice
  • 1 Tbsp
    worcestershire sauce
  • 1-28 oz can
    plum tomato, crushed
  • 1/4 c
    water
  • 1/2 c
    dill, fresh, chopped
  • 1/2 c
    cooked rice, barley or quinoa.
  • 1-3 lbs
    head of cabbage, chopped
  • 2 Tbsp
    butter
  • salt and pepper to taste
  • 2 c
    mozzarella or muenster cheese grated or slices

How To Make michelle's cabbage roll casserole

    Preheat oven to 350 degrees and grease a 9x13 casserole pan.

    In a large pan heat 2Tbsp butter. Add slivered onions. Stir cooking about 5 minutes on med high heat. Crumble up the meat add to pan and brown stirring and breaking up the meat. Stir in currents/raisins, lemon juice, Worcestershire sauce. Season with salt and pepper.

    Once meat is browned stir in rice. Stir in crushed tomatoes. Swirl water in the bottom of the tomato can and add to pot then stir in and add the dill. Bring to a boil, reduce heat to med/low and let simmer while you prepare the cabbage.

    In another large pan heat 2 Tbsp butter. Add chopped cabbage. Place lid on pot and set on meduim high heat. Stir frequently to prevent burning.

    Once cabbage is done, place 1/2 cabbage in bottom of casserole dish, press down with the back of the spoon. Ladle 1/2 the meat mixture over the cabbage. Repeat the steps. Cover with foil and bake 45 minutes. Then remove the foil and cover with the cheese. Bake 15 minutes longer. Remove from oven and let sit at least 10 minutes.
