hunter sausages

I'm not quite sure why these are called Hunter Sausages but they taste lovely....we tweeked the amounts just a little but that's personal preference. They go down well at BBQ's.

Ingredients For hunter sausages

  • 2 lb
    (2kgs) pork butt
  • 1 lb
    (500g) lean smoked bacon
  • 1/2 c
    beer or water
  • 1 Tbsp
    whole yellow mustard seeds
  • 2 tsp
    minced garlic
  • 2
    2-tsp coarsely ground black pepper
  • 1 tsp
    sweet hungarian paprika
  • 2 tsp
    dry mustard
  • 1-tsp kosher salt
  • 1 tsp
    ground cilantro (coriander)
  • 1 tsp
    freshly grated nutmeg
  • 1/2 tsp
    ground ginger

How To Make hunter sausages

    Grind the meat on medium
  • 2
    Mix the seasoning and herbs and spices into a cup of iced water.
  • 3
    Combine all ingredients, mix well. Regrind on medium & stuff into casings.
