hunter sausages
I'm not quite sure why these are called Hunter Sausages but they taste lovely....we tweeked the amounts just a little but that's personal preference. They go down well at BBQ's.

Ingredients For hunter sausages

2 lb(2kgs) pork butt

1 lb(500g) lean smoked bacon

1/2 cbeer or water

1 Tbspwhole yellow mustard seeds

2 tspminced garlic

22-tsp coarsely ground black pepper

1 tspsweet hungarian paprika

2 tspdry mustard
-
1-tsp kosher salt
-
1 tspground cilantro (coriander)

1 tspfreshly grated nutmeg

1/2 tspground ginger
How To Make hunter sausages

1Grind the meat on medium
-
2Mix the seasoning and herbs and spices into a cup of iced water.

3Combine all ingredients, mix well. Regrind on medium & stuff into casings.
