This new burger casserole recipe I created is called Louisiana Cowboy, filled with honey mustard ground beef, rotini pasta, sharp cheddar queso and barbecue potato chips.

Ingredients For louisiana cowboy burger casserole

  • 4 c
    barbecue potato chips, divided
  • 1 c
    crumbled cooked bacon
  • 3/4 c
    honey barbecue sauce
  • 1 lb
    rotini pasta
  • 1 Tbsp
    avocado oil
  • 2 lb
    ground beef
  • 1 Tbsp
    steak seasoning
  • 1
    packet dry onion soup mix
  • 3 Tbsp
    honey mustard
  • 1 Tbsp
    margarine
  • 1 c
    heavy cream
  • 3/4 c
    milk
  • 8 oz
    low-fat cream cheese, softened
  • 1 can
    diced tomatoes and green chilies, drained
  • 8 oz
    sharp cheddar cheese, shredded

How To Make louisiana cowboy burger casserole

    Preheat oven to 350 degrees F.

    Coat a 9x13 inch baking dish with cooking spray. Add 2 cups barbecue potato chips and crumbled bacon; mix well. Drizzle with honey barbecue sauce evenly.

    Cook rotini pasta according to package directions; drain.

    Heat avocado oil in a large, deep skillet over medium-high heat. Add ground beef and cook for 5 minutes until no longer pink and crumbled. Drain any excess fat.

    Reduced to low heat.

    Stir in steak seasoning, dry onion soup mix and honey mustard. Remove from heat and set aside.

    Melt margarine in a large saucepan over medium heat. Combine heavy cream, milk, cream cheese, diced tomatoes/green chilies and shredded sharp cheddar cheese. Stir together and simmer for 8 minutes or until blended and thickened.

    Add cooked rotini pasta and honey mustard beef mixture; mix well for 3 minutes until combined.

    Spoon into a prepared baking dish evenly. Crush remaining barbecue chips and sprinkle over top.
