My family enjoys a bowl all by itself with a few tortillas but sometimes I will make some mashed potatoes and put them in the bowl first and cover them with the green chilli and top with shredded cheese. You can also pour over French fries and top with cheese and sour cream or use it to smother burritos. However you choose, this is s hearty comfort food dish that won't keep you in the kitchen all day. Enjoy!

Ingredients For comfort green chili

  • 5 lb
    pork ( bone in is fine if using slow cooked)
  • 2 md
    tomatoes, diced
  • 1 can
    vegetable or chicken broth
  • 3 c
    aneheim chilies, chopped.
  • 1 lg
    onion, quartered
  • 4-5 clove
    garlic, diced
  • 1 sprig
    thyme
  • 1 Tbsp
    rosemary
  • 3-4 tsp
    cumin
  • 3 Tbsp
    paprika
  • 1 each Tbsp
    garlic powder, onion powder and pepper.
  • 4-6 c
    water
  • 1 1/2 Tbsp
    oil of choice.
  • 1 can
    cream of celery soup.

How To Make comfort green chili

    If using slow cooker add all ingredients and cook on low for about 6-8 hrs.

    In large pot, heat oil on medium high heat, add thyme and cut pork and sear on all sides.

    Remove thyme, add cream of celery,broth, onion, garlic and chopped aneheims. Let cook about 40 mins. On medium heat.

    Add water and remaining ingredients, reduce heat to low, cover and let cook 4-6 hrs, until pork shreds easily with fork.stirring occasionally.
