Ingredients For bunyan's diabetic pork loin w/mustard sauce

  • MARINADE
  • 1/4 c
    soy sauce, low sodium
  • 1/4 c
    jack daniels whiskey
  • 1 Tbsp
    splenda/brown sugar blend
  • 3 lb
    boneless pork loin
  • MUSTARD SAUCE
  • 1 Tbsp
    dry mustard
  • 1 1/2 tsp
    apple cider vinegar
  • 1/3 c
    sour cream
  • 1/3 c
    mayonnaise or bunyannaise (recipe here on jap)
  • 1 Tbsp
    finely chopped green onions
  • sea salt to taste

How To Make bunyan's diabetic pork loin w/mustard sauce

    Combine the marinade ingredients
  • 2
    Dump marinade into a large ziplock bag
  • 3
    Drop in the pork loin
  • 4
    Seal the bag and shake to coat the pork loin
  • 5
    open the bag slightly
  • 6
    Squeeze out as much air as you can
  • 7
    Seal the bag tightly
  • 8
    Stash in the fridge overnight
  • 9
    Preheat the oven to 350
  • 10
    Take the pork loin out of the marinade

    Put the pork loin on a rack in a roasting pan. FAT SIDE UP!

    Roast on the center rack of the oven for an hour. Meat should be 155 degrees internally when you pull it from the oven

    Set the pork loin aside to rest ( at least 30 minutes )

    Dump the vinegar, dry mustard, sour cream, mayo & salt in a bowl

    Whisk thoroughly 'till all ingredients are completely combined

    Slice the pork loin

    Spoon the sauce over the top

    Garnish with the chopped green onions
