If you are looking for a quick and easy dinner. This is it.I love Basil. This is a great dish that is low fat,and light.Full of tomato flavor,and topped off with cheese.This tomato combination can also be served on baguettes as an appetizer.You may also add some cooked diced chicken breast,or other protein to this dish.Enjoy!!

Ingredients For fresh tomato, parmesan, and basil pasta

  • 4-5
    diced plum tomatoes
  • 4-5 Tbsp
    olive oil
  • pinch
    salt
  • pinch
    pepper
  • 1
    clove of garlic( for a milder garlic flavor.( saute for a few seconds before adding to basil) garlic in a bit of olive oil
  • 6-7
    large basil leaves,or double small leaves
  • 1/4 c
    part skim parmesan cheese
  • 1/4 c
    fat free feta cheese
  • 1/2 lb
    pasta of choice
  • 1 1/2 tsp
    balsamic vinegar

How To Make fresh tomato, parmesan, and basil pasta

    Dice Plum tomatoes. Put in a glass bowl,or other bowl. Do not use a metal bowl.Salt and pepper tomatoes. Add the olive oil,and balsamic vinegar and lightly toss together. Let sit for 30 minutes. The longer it sits the juicier the tomatoes will get.

    In a food processor.Place Basil leaves and a clove of Garlic and pulse for about 30 seconds or so.

    Add the basil,garlic,and Parmesan cheese to tomatoes.Combine well.
  • Served over Spinach Fettuccine

    cook pasta and drain. Place on a plate. Top with tomato mixture. Sprinkle Feta cheese on top.
