My mother use to make this as an oven casserole when I was a child. I decided to jazz it up a little bit and cook it on the stovetop to avoid heating up the oven during the summer. It's a quick after work dinner to make that will please adults and children.

Ingredients For skillet jackpot casserole

  • 1 box
    macaroni, cooked
  • 1 can
    tomato sauce (15 oz)
  • 1 can
    corn, drained
  • 1
    onions, yellow, medium, diced
  • 1 lb
    ground beef
  • 1 pkg
    taco seasoning mix
  • 1 c
    cheese, shredded

How To Make skillet jackpot casserole

  • 1
    Cook macaroni, rinse and set aside. Dice onion.
  • 2
    In a non stick skillet, cook onion until translucent and add LEAN ground beef, cook until done. Drain.

    On medium heat, add tomato sauce (15 oz), drained corn, and half of sauce can of water to meat/onion mixture. Stir in taco seasoning and warm through.

    Add cooked macaroni to above mixture until desired ratio of macaroni to meat mixture, warm through.

    Add shredded cheese to top of meat/macaroni mixture and turn heat down to medium low until cheese melts. I used a jack & cheddar mix. Serve.
