OMG, this recipe is so like a frozen entree that I used to buy when I was working and couldn't cook every night. This is a vegetarian version but chicken added to it makes it extra good. Recipe & photo: allrecipes.com 07-10-14

Ingredients For peanut noodles

8 ozspaghetti

2 Tbspsesame oil

1 bunchgreen onions, sliced -- white parts only

1 tspminced fresh ginger
-
1/3 ccreamy peanut butter - or chunky for added crunch

1/4 csoy sauce
-
1/4 chot water
-
1 Tbspcider vinegar
-
1 tspsugar
-
1/4 tspcrushed red pepper flakes
-
green onion tops for garnish
How To Make peanut noodles

1Cook the spaghetti in a large pot of boiling water until al dente. Drain.

2Meanwhile, in a small skillet, heat oil over low heat, then cook onions, stirring, until tender. Add ginger; cook, stirring, for 1 to 2 minutes.

3Increase heat to medium-low; mix in peanut butter, soy sauce, water vinegar, sugar, and pepper. Remove from heat.

4Toss spaghetti with sauce. Garnish with green onion tops, if desired.
