Ingredients For pasta with fresh tomatoes, lemon, and feta

    tomatoes (about 18 ounces), cut into 1/2" dice
  • 1 sm
    red onion, chopped
  • 1 tsp
    fresh lemon zest
  • 1/2 tsp
    salt
  • 1/2 tsp
    freshly ground pepper
  • 1 c
    crumbled feta cheese
  • 8 oz
    low carb fettuccini pasta

How To Make pasta with fresh tomatoes, lemon, and feta

    In a medium bowl combine tomatoes,onion,zest, salt,and pepper. Let sit at room temperature at least 30 minutes. Cook pasta according to package direction. Drain and toss with tomato mixture. Sprinkle with feta. Serve warm or at room temperature.
