This soup brings back many fond memories of my Gram's simple, yet comforting recipes..sometimes she would brown off some Italian sausage and add to this soup, to add more heartiness...either way, I loved it..she usually made a huge pot of this, and never was there any left...we would keep heating it till it was gone... My version of her recipe was cut to 1/4 of what she used to make...recipe can easily be doubled. Enjoy!

Ingredients For ~ gram's simple pasta soup ~

  • 4 clove
    garlic,minced
  • 1 md
    onion, chopped
  • 1 Tbsp
    olive oil
  • 3 c
    chicken broth - i add a little chicken buillon
  • 1 - 15 oz
    can - cannellini beans - drained
  • 1 -4.5 oz
    diced tomatoes with garlic, basil & oregano - undrained
  • 1 tsp
    dried oregano
  • 1/4 c
    red wine or cooking red wine
  • 8 oz
    elbow macaroni
  • fresh grated parmesan for garnish
  • salt
    & pepper to taste

How To Make ~ gram's simple pasta soup ~

    In a dutch oven, over medium heat - add the olive oil, onions and garlic and saute until soft, being careful not to burn.

    Add the broth, oregano, tomatoes w/ juice, red wine and beans. Bring to a boil then lower heat and simmer 10 - 15 minutes.

    Add the pasta and cook until done.Stirring occasionally so pasta doesn't stick. ( about 10 minutes ) Place a lid over the pot, turn off the heat and let the pasta absorb some of the liquid. It will be a thicker soup. If you want more broth, add a little extra chicken broth.

    We always had this with Italian bread and sprinkled with some Parmesan...salt & pepper to taste, then dig in!
