Ingredients For garden green pasta & feta salad

1 pkgpasta of choice

1 casparagus, fresh,peel the stalk and cut on the bias

1/2 lbgreen beans, fresh,cut on the bias

1 cbroccoli florets
-
1 lgshallots,sliced
-
2 smripe tomatoes,slice into wedges
-
1/2 cromano cheese, grated
-
1/2 tspsalt and pepper,plus three tablespoons of melted butter
-
3 cloveroasted garlic,smashed
-
1/4 cmy lemon dressing or fresh lemon juice and olive oil
- FETA SALAD
-
1/2 bunchred leaf and romaine lettuce
-
2 carugula
-
3 smripe tomatoes,cut into wedges
-
1/2 lgseedless cucumber,diced
-
1/4 cmy lemon dressing or fresh lemon juice and olive oil
-
1 pinchsalt and pepper
How To Make garden green pasta & feta salad

1Cook the pasta according to the directions,strain and reserve,also reserve one cup of the pasta water.

2Saute the shallots in a non stick fry pan in a tablespoon of olive oil until lightly browned. Toss the cut vegetables in the lemon dressing.Add to the pasta and toss together to combine.

3Add the melted butter and the grated cheese,roasted garlic and toss to combine.If you need to add the pasta water now you can add a little a a time to moisten the pasta if needed.Place in serving dish and garnish with more grated cheese if desired.

4Clean and chop all of the salad ingredients,toss with the dressing and sprinkle with feta cheese. Serve side by side with some crusty bread and butter,enjoy!!! :)
