Ingredients For fettuccini alfredo with procioutto & peas

2 Tbspolive oil, extra virgin

2shallots, minced

1 tspminced garlic

1 cheavy cream
-
1/4 lbprosciutto, julienned

1 cfrozen peas, thawed

1/2 cfresh parm/reggiano

1 lbfettucine
-
salt and pepper to taste
How To Make fettuccini alfredo with procioutto & peas

1Heat oil in skillet over medium heat and add shallots and garlic, sauté for a couple minutes or until tender. Add cream and cook for 1-2 minutes. Season with S&P to taste.

2Add prosciutto and peas and toss gently to combine. Sprinkle cheese over top and stir to combine. cook until heated through.

3Cook pasta until al dente, and drain, reserving 1/4 cup of the pasta water. Add reserved water and pasta to the skillet with sauce and toss to combine. Season with S&P and serve with more cheese.

4I like to serve this with French bread, with Swiss cheese spread, and a good wine.
