Ingredients For creamy spaghetti w/ zucchini

1 lbspaghetti

3 Tbspolive oil

1 lgzucchini, washed

1/2 cbasil leaves, cut into ribbons

1/2 lblow-fat ricotta cheese
How To Make creamy spaghetti w/ zucchini

1Cook pasta as directed, reserve 1/4 cup water, drain remaining water, replace pasta into pot. Using a shredder, shred zucchini. Heat oil in lg skillet over medium heat.

2Add zucchini and a pinch of salt. Stir to coat w/ oil. Cook, stirring for 4 mins. Add spaghetti and ricotta to skillet. Toss gently to combine.

3If it is too sticky, add a little of the reserved water. Season w/ salt and pepper.
