Ingredients For creamy bow tie pasta with kale

  • 4 slice
    bacon, cut into 1/4 in pieces
  • 3 clove
    garlic, smashed
  • 2 c
    fresh kale, chopped
  • 3 lg
    eggs
  • 1/2 c
    parmigiano-reggiano, grated
  • 1/2 c
    parmesan cheese
  • 2 c
    bow-tie pasta, uncooked

How To Make creamy bow tie pasta with kale

    In a large skillet at med heat cook bacon pieces until slightly brown, add the smashed garlic. Cook until bacon is crisp. Drain on paper towel and reserve 2 tablespoons of drippings.

    Heat the reserved drippings and add kale. Cook until wilted. Add 1/2 cup water and cook until tender. Prepare bow tie pasta according to package. Drain and reserve 1 cup pasta water.

    In a large bowl whisk eggs and cheeses until combine. Stir in a little of the hot pasta water and then the pasta and kale. Add the bacon pieces and mix until everything is combine.
